How to Make Beefy Mac and Cheese in a Slow Cooker

The family just loved this dish. It was a nice side dish but hearty enough to be a main dish. Many a left over lunches were had with it!

Now this recipe (adapted from one found inGooseberry Patch’sSlow-Cookers, Casseroles & SkilletsSlow Cooker Beefy Mac and Cheese - Recipes That Crock! (3)) calls for browning your beef before cRockin’, so earlier in the week when I made that yummy Lasagna Soup, I went ahead and browned up my beef for both recipes and popped the beef for my Slow Cooker Beefy Mac and Cheese in the fridge until I needed it.

That made throwing this meal together in the morning a snap.

One other note… I do believe one reason we LOVED this recipe was that I once again used my pantry staple as the tomatoes in this dish… Basil, Oregano and Garlic Diced Tomatoes! SOOO yummy!

What You Will Need for Slow Cooker Beefy Mac and Cheese

Ingredients Needed

  • 1 lb ground beef, browned and drained
  • 15 oz can diced tomatoes with basil, garlic and oregano, drained
  • 10.75 oz can cream of mushroom soup
  • 1.5 oz cheese sauce mix (I used an Alfredo sauce mix.)
  • 2 tablespoons tomato paste
  • 1 cup shredded cheddar cheese
  • 8 oz pkg elbow macaroni, cooked

Equipment Needed

  • Skillet and colander or micro cooker
  • Can opener
  • Spoon or small stirring spatula
  • Measuring spoon
  • Measuring cup
  • Wooden spoon or stirring spatula
  • Sauce pan and colander (for your macaroni)
  • 6 quart slow cooker

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high, plus and additional 10 to 15 minutes at the end for your cheese to melt

Instructions

  • Combine beef with remaining ingredients except macaroni and shredded cheese in a 6 quart slow cooker.

  • Cover and cook on low for 4-5 hours or 2-2.5 hours on high, stirring occasionally.

  • 30 minutes before you want to serve, stir in cheese and cooked macaroni.

  • Cover and cook until heated through 10-15 minutes.

  • Stir before serving.

    What is the Cheese Sauce Mix? An envelope of something? A box?

      It is an envelope. With the mixes (gravy, seasonings, etc.) The only one I could find was an alfredo mix but it was really good.
